Zesty Corn and Quinoa Salad
Ingredients
- Sunshine Sweet Corn - 1.5 cups
- Quinoa - 1 cup
- Chicken Broth - 2 cups
- Black Beans - 1 can, drained and rinsed
- Tomatoes - 1.5 cups, chopped
- Green Onions - 5, chopped
- Garlic - 1 clove, minced
- Cilantro - 1/4 cup, chopped
- Lime Juice - 1/2 lime
- Olive Oil - 2 tablespoons
- Red Pepper Flakes - 1/2 teaspoon
- Cumin - 2 teaspoons
- Red Wine Vinegar - 2 tablespoons
- Salt and Pepper - to taste
Instructions
Bring quinoa and chicken broth to a boil
Reduce heat to low, cover and simmer until water has absorbed and quinoa is soft – let cool
In small bowl mix olive oil, red wine vinegar, lime juice, cilantro, red pepper flakes and cumin
In a large bowl, combine remaining ingredients and mix together
Toss with the dressing mixture and salt and pepper to taste
Cover and chill
Serve with tortilla chip or crackers
