Grilled Corn with Lime Avocado Crema and Queso Fresco
- 1 avocado, halved, pitted, peeled and chopped
- 1/4 cup fresh lime juice
- 1 garlic clove
- 1/2 bunch cilantro
- 1/2 cup sour cream
- Sea salt and ground black pepper, to taste
- 4 ears Sunshine Sweet corn, husks peeled back and tied
- 1/2 cup grated queso fresco
- Cayenne pepper
In a blender, combine avocado, lime juice, garlic, cilantro, sour cream and a pinch of salt; whirl until smooth. Add water if too thick. Season corn with salt and pepper; grill until kernels are bright yellow and slightly charred. Spread lime-avocado crema evenly over corn; sprinkle with queso fresco and dust with cayenne pepper.
